Kohlrabi is definitely one of my favorite winter vegetables. One of the best things about it is that it’s so versatile! For example you can use it to make super healthy gluten free ravioli! How cool is that? These ravioli are perfect as a light appetzer if you are having guest over for dinner or if you just feel like having a light meal. They are quite easy to make but will definitely impress your guests.
Ingredients for 2 servings:
- 4 large kohlrabi
- olive oil
- 2 red peppers
- 1/2 onion
- 3 tbsp ground almonds
- 3 tbsp tomato paste
Bring a pot of salted water to boil. While the water is coming to a boil, slice the kohlrabi into very thin slices. It is easier to use a veggie slicer in order to get evenly cut pieces. Once you have sliced the kohlrabi, using a circle shaped cookie cutter, cut out circles. Put the kohlrabi circles into the boiling water and let it cook for 10 mins.
While the kohlrabi circles are cooking, cut the onions and peppers into little cubes and cook with some olive oil until they become soft. Once they have softened, turn down the heat and stir in the almonds, tomato paste, basil, salt & pepper. Cook on low heat until it turns into an almost creamy consistency. This will happen quite fast.
Once the kohlrabi are cooked, remove them from the water and lay out on a kitchen towel and let them dry. Then coat them with a little bit of olive oil on one side.
To assemble the ravioli take one kohlrabi circle and put a little bit of the pepper mix on the side coated in olive oil, take another circle and press them together. Repeat until you have used up all the circles. ENJOY!
