Such a quick meal. It honestly doesn’t take longer than 10 mins to whip this dish together. Of course you can add the pesto to any kind of pasta, but not only do the zucchini and the pesto really compliment each other but the pesto makes for a pretty filling and hearty meal. - 6 small zucchinis (they are easier to spiralize)
- 2/3 c green olives
- 2/3 c sun dried tomatoes (without oil)
- 1/3 c blanched almonds
- 1 handful of basil
- 5 tbsp olive oil
Spiralize your zucchinis using a spiralizer. If you don’t have one, just julienne your zucchini. Add the noodles into a bowl and cover with 2 tbsp olive oil and some salt. Let them sit while you make the pesto.
Add the almonds into a food processor and pulse a few times until they turn into a very coarse meal. Then add the olives, tomatoes, basil and 3 tbsp of olive oil and process until it forms a creamy pesto.
Heat a pan on medium heat and add in the zucchini noodles and the pesto. Mix until the pesto is spread evenly and the noodles are warm. Be careful to not over cook them. ENJOY!
