So basically these vegan feta cakes are all you want from a vegan cheese. They are quick and easy to make, they taste like feta and you can use them in loads of different ways. Like this salad. You can also sprinkle them on pizza or pasta, or other uses for feta that I can’t think of right now. They are also pretty good on their own. Did i mention you only need 4 ingredients??
Makes 4 little cakes.
- 1 cup soaked blanched almonds
- juice of 1 lemon
- salt to taste
- garlic powder to taste
Preheat your oven to 180C.
Add all the ingredients plus some water to a blender. Blend until it forms a smooth paste. You will probably need to taste and adjust the seasoning and blend again.
Divide between 4 greased small soufflé tins and bake for about 20 mins.
