Gingerbread Oatmeal

I love my oatmeal for breakfast, especially in winter. But sometimes the good old banana/cinnamon version gets old. Can you think of anything better than having a oatmeal that tastes like a gingerbread cookie for breakfast? I can not.




Serves 1


  • 1c oat milk
  • 1/2 c oats
  • 1 sweet apple (shredded)
  • 2-3 tbs coconut sugar
  • 2 tsp cinnamon
  • pinch nutmeg
  • pinch cardamom
  • pinch ginger
  • pinch coriander
  • pinch cloves
  • buckwheat to sprinkle (optional)

Bring oat milk to a simmer and add spices. You can use a gingerbread spice mix, but I’m just not a big fan of spice mixes. Then add shredded apple and let it simmer for a couple of minutes. Then turn the heat down and add oats and sugar. Cook until the oats have absorbed the milk, sprinkle with buckwheat and ENJOY!
