Sushi Bowl

Delicious and quick lunchbowl for one. I love lunchbowls, especially on days where I crave about 50 foods at once but I don’t really feel like cooking, but kinda do, but also want something healthy and nourishing. You know what I’m talking about? No? Never mind but its tasty so try it 🙂

Serves 1

Ingredients:

  • 1/2 cup of brown rice
  • 1/2 avocado
  • 1 cup of mushrooms
  • 2 hands full of baby spinach
  • 1-2 cloves of garlic
  • 1 spring onion
  • 1 carrot
  • 1 handful of some leafy greens ( I used mache salad)
  • 1/2 cup of sprouts
  • juice of 1 lemon
  • soy sauce
  • sesame oil
  • rice vinegar
  • some seaweed
  • chili flakes
  • sesame seeds

Method:

Cook the brown rice. While the rice is cooking heat some sesame oil in a pan and saute spinach together with crushed garlic gloves. Next saute your mushrooms. Cut up your carrot, spring onion, greens, avocado and seaweed.

Once the rice is cooked add some rice vinegar and stir for about 3-5 minutes until the rice has cooled down and turns a little sticky.

Add the spinach, avocado, mushrooms, carrot, spring onion, greens, seaweed, sprouts and rice to a bowl and sprinkle with lemon juice, soy sauce, chili flakes and sesame seeds.

    I totally get what you mean in the opening paragraph, I feel like that all the time, just give me all the food! This looks insanely good! I must admit I hate seaweed unless its from the Chinese takeout but everything else sounds so good.
