Rocket, raw beetroot, almond feta, pumpkin seeds, and crispy bulgur – need I say more? Yes sorry, it also comes with a delicious sweet & spicy dressing.
I have recently discovered the magic of raw beetroots. SO yummy, I actually prefer them to the cooked ones.
- 2 hands full of rocket
- 1/4 cup cooked bulgur
- 1/4 pumpkin seed
- 1 almond feta cake
- 1 raw beetroot
For the Dressing:
- 1 tbsp olive oil (optional you can sub with water)
- 1 tbsp apple cider vinegar
- 1 tbsp maple sirup
- 1 tbsp dijon mustard
- sprinkle of pomegranate sirup:
Heat a dry non stick pan to medium/high heat and cook the bulgur until it turns crispy. Julienne the beetroot and Crumble up the feta cake. Then add all the ingredients into a bowl and mix well. Voila!
