Kale Salad with Sunflower Seed Dressing

I love using sunflower seeds because they are a much more affordable alternative to nuts and still so tasty! I just had to try making a creamy salad dressing using sunflower seeds.

This is so yummy! Basically adding any kind of citrusy dressing to kale will break it down and transform it into an awesome salad base.


Serves 2


  • 4 handful of kale
  • 3/4 c soaked sunflowers seeds
  • 1/4 sunflower seeds
  • juice of half a lemon
  • 1/2 c of water
  • 1 tbsp nutritional yeast
  • 1 handful of fresh basil
  • 1 tbsp tamari
  • onion powder
  • salt
  • pepper

+ Toppings of choice


Remove all of the stalks from the kale and tear into bite size pieces, then add to a large bowl. Add all the remaining ingredients except for the unsoaked sunflower seeds to a food processor or blender and process until a smooth paste forms. Add the dressing to the bowl with the kale. Using your hands massage it into the kale for a few minutes. This will allow the kale to break down.

Finally add the remaining sunflower seeds and any toppings you like. I used avocado and pomegranate seeds but sundried tomatoes, spring onion, olives or any kind of beans would work great as well!

    This… is… so… beautiful…. *o* I can’t even with this. Those colors are just GORGEOUS. The pom seeds just look like little rubies sitting atop all of that green.
