6 Minute Miso Bowl | Vegan

A lot of the time I get asked the question if cooking all my meals from scratch doesn’t get tiring sometimes. My answer is always no, because cooking doesn’t necessarily equal a lot of effort. So I’ve decided to start a series of recipes which you can make under 10 mins.

This is the first one. Such a satisfying meal and so very quick to put together, even for the super lazy 🙂


Makes about 3 servings.


  • 90g soba noodels
  • 1/2 zucchini
  • 150g mushrooms
  • a had full of cabbage
  • 1 tablespoon of miso paste
  • 1 teaspoon veg stock
  • soy sauce
  • lemon juice

to garnish (optional)

  • cilantro
  • spring onion
  • chili


In a medium pot bring about 5-6 cups of water to a boil. Add the soba noodles to the boiling water and cook for 3 minutes. Next add the chopped up vegetables, miso paste and veg stock and cook for another 3 minutes. Take the pot off the heat and add in the soy sauce and lemon juice to taste, stir well and make sure the miso paste has dissolved. Garnish and serve!

Ps.: you can substitute the vegetables for anything you like. For example spinach, pak choi or thinly sliced carrots would also work well.
