Turnip and Almond Foam Soup | Vegan

Winter is slowly but surely coming to an end. It’s still cold and rainy enough (at least where I am) that soups are my go-to warming comfort food (yes my understanding of comfort food might be a little different).

This one is extra special because it comes topped with a almond foam that makes this soup even more delicious.

Serves 4


  • 1 turnip
  • 3 carrots
  • 2 spring onions
  • 1 tbsp minced ginger
  • 1/2 liter miso stock (you can substitute with veggie stock)
  • 1 can of coconut milk
  • 2 tbsp almond butter
  • 1 tbsp maple sirup
  • 1 tsp tumeric
  • 1 tsp caraway
  • 1 tbsp lemon juice
  • salt
  • pepper

for the foam:

  • 2 tbsp almond butter
  • 1/2 water
  • salt
  • garlic powder


Begin by chopping your vegetables and adding them to a medium sized pot. Next add the miso stock and the coconut milk and bring the bring to a high simmer and let it cook for around 20 mins until the vegetables become soft. Then you can add the remaining ingredients for the soup. Using an immersion blender, blend everything until it turns into a creamy soup. Let the soup simmer for a little while until you make the foam.

For the foam add all the ingredients into a high mixing container or a large bowl and blend with the immersion blender until it starts forming a foam. This can take a couple of minutes. Finally serve your soup with 2-3 tbsp of foam on top of each serving and garnished with some herbs.

Make sure to make the foam right before you serve your soup, otherwise it might collapse.
