Banana & Quinoa Clusters | Vegan

I’m a very lazy person, especially in the morning, so I really like lazy breakfasts that involve virtually no preparation. What I’m trying to say is, I love cereal. Most cereals are pretty nasty though, in terms of ingredients. I almost bought a carton of weetabix the other day and when I looked at the ingredients I was pretty put off to be honest. So I like making my own.

This one is very simple and straight forward. Just dump a couple of ingredients in a large bowl, stir and put in the oven. No additional string while the clusters are baking etc. Easy!

Makes about 4 servings.

  • 1 c puffed quinoa
  • 1 c oats
  • 1/2 c puffed amaranth
  • 1/2 c coconut flakes
  • 1/2 c buckwheat
  • 2 tbsp coconut oil
  • 1 tbsp tahini
  • 1 tbsp maple sirup
  • 1-2 tbsp coconut sugar
  • 1 mashed banana
  • a dash of vanilla powder (optional)

Preheat your oven to 120 C. Next just dump all the dry ingredients in one bowl and stir until everything is mixed, next add all the wet ingredients and stir again until everything is well combined.

Line a baking tray with baking paper and spread out the batter evenly, make sure it all sticks together. Finally bake for around 45-50 mins. Let it cool down a little after you remove it from the oven, to allow it to get even crispier.

Question: Could you please tell me where you purchase Quinoa Puffs?

Hi Ido, I get them at my local organic shop. But you can make them yourself very easily by just popping the raw quinoa in a large dry pot on low-medium heat. Kind of like popcorn.
