Beetroot Hummus | Vegan

Who doesn’t love a little psychedelic hummus on their pita? It’s just as easy to make as regular hummus but it looks so much prettier . Here is the recipe I came up with for you guys:

Ingredients:

  • 250g chickpeas
  • 170g cooked beetroot
  • juice of 1 lemon
  • 1 tbsp tahini
  • 1/2 tsp coriander powder
  • 1 clove of garlic
  • salt to taste
  • about 2-4 tbsp of water
  • parsley and black sesame for garnish (optional)

Method:

Add all of the ingredients, except for the water into a food processor or blender and start blending. Add the water gradually while you’re blending, you might need a little more or less to achieve your desired texture. Blend until everything is super smooth (about 10 mins.). Once you’re done you can add a little chopped parsley and sesame seeds to make it look even better.
