Veggie Dürüm | Vegan

Where I’m from Döner Kebabs and Dürüm are a big thing, you can get them pretty much on every street corner. Needless to say I grew up eating them a lot. So when I first go into vegan cooking a few years back this was one of the first vegan recipes I ever created. For some reason I kind of forgot about it, which is insane because it’s the best thing ever.

But know I finally got around to making it again for you guys. Think spicy marinated veggies, mixed with fresh ones and a yoghurt dill sauce ,you’d never be able to tell, is vegan in a pita wrap. YUM.



Makes 4 Dürüms.


  • 4 pita wraps
  • 1 zucchini
  • 1 red onion
  • 1 red pepper
  • 2 carrots
  • 1/2 aubergine
  • handful of cherry tomatoes
  • 1/4 cucumber

for the marinade:

  • 2 tbsp melted coconut oil (you can also use olive oil)
  • 2 tbsp tomato paste
  • 1 1/2 tsp sweet paprika
  • 1/2 tsp cumin
  • 1 tsp majoran
  • 1 tsp cinnamon
  • pinch of lemon juice
  • 2 tbsp aleppo pepper flakes (turkish pepper flakes)
  • salt to taste

for the yoghurt sauce:

  • 1 cup soy yoghurt (non sweetend)
  • 1 clove of garlic crushed
  • 1 1/2 -2 tbsp apple cider vinegar
  • 2 tbsp fresh dill
  • salt & pepper to taste


Cut all the zucchini, red pepper, onion, carrots and aubergine into small chunks and put them in a large flat dish.

In a small bowl add all the ingredients for the marinade and whisk together. Add the marinade to the vegetables and coat evenly. Let them sit for a minimum of 1 hour.

In the meantime make the yoghurt sauce by adding all the ingredients into a bowl and mixing them well, also cut the tomatoes and cucumber into bite size pieces.

After the vegetables have marinated, heat a dry skillet (preferably one that is not non-stick) and roast the veggies for about 10 mins. Finally heat your pita wraps and assemble your dürüm. I like to serve mine with a side of oven baked fries. SO GOOD!
