Summer Salad with Feta Balls | Vegan

Slowly but surely summer is coming and therefore I thought it’s time for some amazing and filling (!) salad. 

This one has all the pretty colors you would want in a salad and most importantly it has vegan feta, homemade vegan feta. 

There is a similarly recipe on the blog for vegan feta from a while back but I thought I would give it a little makeover and show you all the different things you could do with it. Enjoy!

  Serves 2-3


  • 1/2 head of lettuce
  • 1/2 head of radicchio
  • 2 spring onions
  • 1 can of chickpeas
  • 1 raw beetroot
  • 3 tbsp apple cider vinegar
  • salt

for the dressing:

  • 1/3 cup soaked cashews
  • juice of 1 lime
  • 3 tbsp plant milk
  • 1 tbsp oil of your choice
  • 3-4 tbsp of water
  • salt

for the feta balls: 

  • 1 cup of soaked almonds
  • salt to taste
  • garlic powder to taste
  • juice of 1 lemon
  • 2-4 tbsp water


Preheat your oven to 190C.

Start by adding all the ingredients into a food processor and blend until it turns into a wet dough-like consistency. Then roll about 1 tbsp worth of batter into a ball, continue with the remaining batter. Place on a baking sheet and bake for 15-20 mins.

Next cut your lettuce and radicchio into thin strips, julienne the beetroot, thinley slice the onions, drain and rinse the chickpeas. Add everything into one large bowl and add the salt and apple cider vinegar. Toss well and set aside. 

Add all the ingredients for the dressing into a food processor and blend well until it becomes smooth. Finally assamble your salad with the feta balls and dressing and serve.
