Mother’s Day Strawberry Pancakes | Vegan

I’m a big believer of appreciating people every day of the year not just the days that have been assigned for it, like valentines, mother’s day or birthdays. But that doesn’t mean you shouldn’t treat your mum to an epic breakfast this Sunday.

I’ve created this super easy & guilt free pancake batter that you can whip up in a couple of minutes in your blender.Your mum will love them and so will the rest of your family.

Serves 4


  • 2 ripe bananas
  • 1 cup of buckwheat flour
  • 3/4 c soy milk
  • 1 cup of strawberries
  • 1 tsp baking powder
  • 1 tsp baking soda
  • a pinch of vanilla powder
  • a tiny pinch of salt
  • coconut oil for frying

for the chocolate sauce:

  • 1/4 c of cocoa butter
  • 3 tbsp cocoa powder
  • 2-3 tbsp maple sirup
  • 1/4-1/2 c of soy milk
  • a pinch of salt


For the pancake batter simply add all the ingredients into your blender and blend thoroughly. Make sure you don’t have any flour lumps in the batter.

Then heat up a little bit of coconut oil in a skillet on low/medium heat. Once the skillet is hot start pouring in the batter and fry the pancakes for about 2-3 minutes on each side.

Finally melt the cocoa butter in a double boiler. Once its liquid stir in the remaining ingredients until a thick sauce forms. You can adjust the amount of the maple sirup and cocoa powder according to your personal taste.

Finally serve the pancakes with some berries and the chocolate sauce drizzled on top.



Ps.: I used little silicon molds that are normally supposed to be used for fried eggs to achieve the heart shape of my pancakes.
