Jackfruit Tacos with Brazil Nut Cheese | Vegan

There are so many ways to make vegan tacos, but my favorite by far is pulled jackfruit. You just need to heat it up and season and voila – the perfect taco ‘meat’. 

For those of you who haven’t heard of jackfruit, which I’m sure most of you have. Jackfruit is the magical tropical fruit that if seasoned the right way can turn into the most convincing meat substitute. 

I buy jackfruit at my local asian supermarket. Make sure you get young green jackfruit in brine. Any other kind won’t work for this recipe.

Serves 2

Ingredients:

  • 1 can of black beans
  • 1 can of sweet corn
  • 2 handful of arugula
  • 12 taco shells
  • cilantro

for the jackfruit meat:

  • 1 can of young green jackfruit in brine
  • 100g tomato paste
  • 1 tbsp olive oil
  • 1/4 white onion
  • 1/2 tsp paprika
  • 1/2 tsp pepper flakes
  • 1/2 tbsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • a pinch of cayenne pepper
  • salt & pepper to taste

for the guacamole:

  • 2 avocados
  • 1/4 red onion
  • juice of 1 lemon
  • garlic powder to taste
  • salt & pepper to taste

for the brazil nut cheese:

  • 1 c brazil nuts
  • 1/2 cup of water
  • juice of 1 lemon
  • 1 tsp oregano
  • 2 tbsp nutritional yeast
  • a pinch of garlic powder
  • a pinch of salt

Method:

Start by making the brazil nut cheese. Simply add all the ingredients into a blender and mix well until a smooth and creamy sauce forms. Transfer into a bowl and set aside.

Next make the jackfruit meat. Drain and rinse the jackfruit. Pull the jackfruit apart using a fork. The ‘meat’ should resemble pulled chicken. Next heat up the olive oil in a large skillet on medium/high heat and slice the onion. Add the onion into the hot oil and let it cool until it becomes translucent, then add the jackfruit and the tomato paste. Mix well and let it cook for about 5 minutes. Then add all the spices and stir until everything is well combined, let it cook for another few minutes. If the mix becomes to dry add a little more oil and tomato paste.

For the guacamole simply mash the avocados with a fork and add the limes juice and seasoning. Cut the onion into very small cubes and mix in with the avocado.

Finally assemble your tacos. First add the arugula, then the jackfruit the guacamole and brazil nut cheese. Sprinkle the corn, black beans and cilantro on top and enjoy.
