Tapioca Tarte with Peanut Crust

I might have gone a little crazy with this one. I’ve been in love with tapioca for a while now and always wanted to do a recipe on it. But I was just waiting for that one idea to create something special, because as delicious tapioca pudding is on its own, I wanted to do something different.

Literally while I was making the pudding the idea came into my head that this would make a great tarte. So I made a flourless peanut crust which took about 15 minutes including the baking. And this is how this delicious Snickers/Pudding Tarte was born.

 

Makes 1 Tarte

Ingredients:

for the pudding filling:

  • 1 cup of tapioca pearls
  • 1 1/2 cup of almond milk
  • 1 can of coconut milk
  • 4 tbsp of cocoa
  • 4-5 tbsp of maple sirup
  • 1/2 tsp vanilla powder
  • a pinch of salt

for the crust:

  • 1 cup almonds
  • 1 cup peanuts
  • 1 1/2 cup of oats
  • 1/2 cup of almond milk
  • 12 dates
  • 1 tbsp coconut oil
  • a pinch of salt

for the frosting:

  • 1/3 c vegan chocolate chips
  • 1/3 c coconut milk
  • 2 tbsp peanut butter
  • 3 tbsp maple sirup
  • 1 tbsp water

Method:

  1. Start by soaking the tapioca pearls in the almond milk in a sauce pot for at least 1 hour.
  2. Next make the crust. Preheat the oven to 170C. Place the peanuts, almonds and oats in the food processor and process until they form a course flour. Next add the remaining ingredients (if the dates are too hard soak them in hot water for a little) and process until a ball of dough forms.
  3. Line a spring form with baking paper and add the dough into the spring form. Press into the bottom and up on the sides, forming a pie crust. Bake the crust for 10 mins.
  4. Now start making the pudding filling. Place the sauce pot with the tapioca on the stove, add the coconut milk and bring to a boil. Reduce the heat and while continuously stirring gradually add the remaining ingredients.
  5. Cook the tapioca while stirring until it thickens, this can take anywhere from 10 to 25 minutes depending on your tapioca.
  6. Let the pudding cool down a little before adding it to the pie crust. Place the tarte into the fridge.
  7. Next bring the coconut milk for the frosting to a boil, then remove from the heat and pour over the chocolate chips. Let it sit for 5 minutes and whisk everything together. Let the mixture sit in the fridge for about 1 hour until it hardens a little bit.
  8. After 1 hour remove the tart and the chocolate mix from the fridge, using a spatula spread the chocolate on top of the tarte. Now whisk together the peanut butter, maple sirup and water. Drizzle the peanut butter mix on top of the tarte and create a marble pattern using a fork.
